  • 1-pound lean ground beef
  • 2 cups crushed Doritos (Nacho Cheese flavor works the best)
  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • One 14-ounce can of black beans (rinsed and drained)
  • One 12-ounce can of corn (drained)
  • 2 cups shredded Tex-Mex cheese blend (cheddar also works)
  • One 15.5-ounce jar of salsa (whatever brand you prefer)

Toppings

While you can choose whatever toppings you like, here are some great suggestions.

  • Sour cream
  • Fresh cilantro
  • Scallions
  • Tomatoes
  • Black olives
  • Avocado
  • Jalapenos
  • Lettuce

Directions

Step One

Preheat the oven to 350 degrees Fahrenheit. While it’s heating, add the olive oil to a cast iron skillet. When hot, lightly brown the beef. Usually, that only takes about five minutes.

Step Two

Next, add the onion and all the spices. Stir to blend well. Cook for another five minutes. Afterward, spoon off the excess fat. Add the corn, salsa, beans, and half of the cheese. Heat the ingredients only until the cheese melts.

Step Three

Layer the Doritos chips in the bottom of a 13×9-inch baking dish. When finished, spoon the beef mixture evenly on top. Next, sprinkle the remaining cheese on the beef mixture and bake uncovered for approximately 20 minutes.

Step Four

Now, you can place the entire baking dish on the table or put individual servings on plates. Then your family can add their favorite toppings.

Helpful Tips

One of the many great things about this taco casserole recipe is that you can make it the night before. When you come home after a hectic day at work, pull it out of the refrigerator and bake it for roughly 25 minutes. If necessary, you can bake it a little longer to ensure the cheese thoroughly melts.

In addition, you can freeze the unbaked casserole for up to one month. If you want, you can freeze several, so you’ll have two or three meals already prepped. In this case, let the casserole thaw in the refrigerator overnight. To make it, cover the dish with foil and bake for 20 minutes. Next, uncover the dish and continue cooking for 15 minutes.

Also, if you don’t want to mess with cleanup, you can bake this taco casserole dish in a disposable aluminum dish. This is an excellent way to introduce your family to something new that they’ll love. However, it’s also excellent for game day.
